Chop the mutton to small bite size pieces, wash, drain and set aside |

In a small frying pan, take little oil keep on low flame and fry the dried red chilly, cumin seeds, coriander seeds and fenugreek, may add little curry leaves for enhanced flavor. Once the spices are friend and aroma is high remove from flame and let it cool for a while. |

Add the friend spices in a blender and blend well into powder |

Put pressure cooker on flame and add the balance oil. Fry the chopped onion until transparent add mutton and fry till the water comes out and add in the spice powder. fry for 2 minutes and add little water and cook the mutton for about 5 to 8 minutes. Don't add too much water to avoid the preparation becoming too much wet. |

Once the pressure is down open the pressure cooker and fry till the mutton becomes dry. |

Transfer to a serving bowl and top it with Curry leaves and Coriander and serve. |
